For as long as I can remember my Mother has been making the same Sausage Casserole and still to this day I crave it and will call her up requesting a feast to fix it.

Drain and save the liquids from your Peas and Mushrooms.
Start off with the Carrots
Top off with mushrooms.. mmm mushrooms
Oh time to add some peas
Sliced onions. You can add as little or as much of these as you would like.
Layer your sliced potatoes evenly over the top.
Add 2 cans of tomato soup to your juices that you saved.
Whisk juices and tomato soup together then add pepper and salt if desired.
Mom always throws her package of sausages in the freezer as she is preparing the rest of the dish to partially freeze them so they cut better.
Time to top it all off with the sausages.
Pour the juice/soup mixture over the top of the casserole then cover and bake until veggies are tender and sausages are browned.
And of course at my parents place a meal isn't complete without homemade rolls and according to my Father you have to have lots and lots of butter hahaha I will never understand how that man stays so thin and fit with the amount of butter he eats :)
