Chicken Mushroom Alfredo

With the weather being so picky it has caused us to be picky as well. We could not agree on anything or decide on what to have for supper so I just went and did what I do best.. RAID THE CUPBOARDS   =)
In doing so I was able to scrounge up some Alfredo sauce,Elbow noodles, Chicken breast, Mushrooms, Peppers and what else but low fat cheese! (you will soon learn that I have a cheese addiction haha)

Start by grilling a boneless skinless chicken breast. Let it cool then cut into strips or dice as you like.
Cook Pasta as directed, rinse, drain and set aside.
Chop Fresh mushrooms and peppers. Feel free to chuck any other veggies in, whatever you may think will taste good or whatever you may be in the mood for. Pretty much anything goes ;)
Now mix everything together. You can put it in a large casserole dish or you can do individual serving dishes like I did.

I then topped our individual serving casserole dishes with low fat cheese, a slice of green pepper and a slice of mushroom to boot!

Cover and bake at 350 until bubbly then remove cover and broil for a couple of minutes until it lightly browns.

Low Fat Shrimp Tacos with Baked home fries

 So for supper last night I decided to do a very quick and very easy taco theme with a shrimpy twist!

I dug through the cupboards and nearly got stuck in the freezer but I managed to find everything to chuck together a pretty good meal.

All you will need is:
Shrimp (I had raw, cut & deveined hiding deep in the freezer)
Taco Seasonings (low sodium)
Potatoes
Tortilla's (whole wheat)
Salsa
Sour Cream
Lettuce and/or your favorite taco toppings
Low Fat shredded Mozzarella cheese

First things first as I walk past the oven to grab everything I quickly reach over and snap it on to 450

Then I just chucked the shrimp in a non-stick frying pan on low heat and sprinkled the low sodium taco seasoning over them , tossed them and covered them.

While those were simmering I washed and sliced my potatoes into small fry like forms. I then toss them in a bowl with more low sodium taco seasoning to cover them and then adding my special touch which includes reaching for the spice rack and grabbing any and all spices and smelling them and if I think they will taste good I sprinkle them in  ;)
Spread the fry like potato forms onto a lightly sprayed cookie sheet and bake, flipping every so often until crispy to your personal liking!

Lay tortillas down and spread roughly 5 shrimp along the center, topping off with sour cream, salsa, veggies of your choice and low fat cheese if you choose to do so.

TA-DA! That's what we had for supper last night. Enjoy!

Untraditional Shepherds Pie

If you are anything like us you love feasting on some of your favorite old fashioned meals that we may have or have not grown up indulging in. With this meal I worked with what I had laying around in the house and put a fresh new twist on an old favorite.



 As I have stated before I do not measure anything out, I just grab things and chuck them together so please bare with me as I get the hang of this  =)

Ingredients
1-2 pounds Lean Ground Beef
1/4 cup of BBQ sauce of choice
4 medium Potatoes
1/2 cup of Frozen Corn
1/2 cup of Frozen Peas
1 can Cream of Mushroom Soup
Garlic Powder
Onion Powder
Dried Dill
Celery seed
Paprika

DirectionsPreheat oven to 375
Brown your lean ground beef, add BBQ sauce and let simmer.
Boil potatoes with garlic powder, onion powder and celery seed (all to your personal preferences. We LOVE garlic mashed potatoes so I go pretty heavy on the seasonings) Strain and Mash
Prepare corn and peas as directed.

Layer your beef along the bottom of your casserole dish gently packing it.
Mix peas, corn and can of mushroom soup then spread evenly over the burger.
Top off with your mashed potato spreading evenly and sprinkle seasonings paprika and dill on top.
Bake for roughly 30-45 mins or until bubbly.
